Salad-In-A-Jar, sort of

2014-08-06 14.22.43I just found out about Salad-In-A-Jar (via Maggie on Facebook) and I can’t believe I didn’t know about it until now! It’s such a neat idea, I wish I still had an office job so I could pack one for lunch. It seems redundant to blog about Salad-In-A-Jar because so many people have already done so (here, here, and here, for example) but it’s all I can think about. And I realized that, notwithstanding the name, I can use all these jar ingredients and mix them up in a bowl! So here is what I am trying today. It’s adapted from Back to her Roots.

Strawberry Spinach Salad

Cooked quinoa
Sliced strawberries
Sunflower seeds
Cubed cheddar cheese
Sliced green onions
Baby spinach

Strawberry-Lime Vinaigrette

a couple of smashed strawberries
2 T olive oil
1 T white wine vinegar
1 T fresh lime juice
1 t mustard
salt & pepper

  1. Great reminder, Mum! I love jars and salad, it just makes sense to combine the two 🙂 I’ll keep this in mind for when I return to work, or maybe later for school lunches!
